Christmas cookies everywhere! Are you looking for a way to slip in a few healthy elements into your snacking for you and your loved ones this holiday? Here’s a simple, 10 minute prep cookie that packs a punch in potassium and manganese, and slips in some roughage and protein as well. Tasty and surprisingly simple.
1/2 cup brown sugar, packed
1/4 cup butter, softened
1/4 cup shortening
1 tsp vanilla extract
1 tsp cinnamon, ground
1/2 tsp baking soda
1/4 tsp baking owder
1/4 tsp salt
1 egg
1 1/2 cups oats
1 cup flour
2 scoops protein powder
1 cup semi-sweet chocolate chips
Heat oven to 375 F. Mix all ingredients except oats, flour, protein powder and chocolate chips. Stir in oats, flour and protein powder. Add chocolate chips and stir. Drop dough by rounded teaspoonfuls onto ungreased cookie sheet. Bake until light brown, about 10 minutes. Remove from cookie sheet immediately. Cool on cooling rack.
